Indonesian Food Science and Technology Journal (IFSTJ) is an International peer-reviewed journal, open access, accredited by Ministry of Education, Culture, Research, and Technology of the Republic of Indonesia as 1st rank journal in Indonesia (SINTA1) and Indexed by  SCOPUS.  The journal contains original research articles and scientific review includes research in the scope of advanced research in the field of Food Science and Technology  (food chemistry and analysis, food processing and engineering, food microbiology, food safety, risk, security, reliability and quality, food engineering, food nutrition, functional food and nutraceuticals, food novelty and innovations with a particular emphasis on the Indonesian food as well as other regions that have similar or relevant  to Indonesian food.

Issue Overview

This issue has been available online since 15 December 2025 as the regular December 2025 edition. It comprises 14 rigorously peer-reviewed original research articles authored and co-authored by 69 scholars from 24 institutional affiliations, reflecting a strong concentration of academic excellence and research diversity. The contributing institutions include several of Indonesia’s leading universities ranked within the top tier of the QS World University Ranking 2026—most notably Gadjah Mada University, IPB University, Diponegoro University, University of Pelita Harapan and Brawijaya University—alongside other highly reputable universities and national research centres across Indonesia.

This issue is further distinguished by its substantive international dimension. Authors and co-authors are affiliated with institutions from seven countries—Indonesia, Malaysia, Japan, Thailand, Saudi Arabia, Vietnam, and Australia—demonstrating sustained cross-border collaboration and scholarly exchange. Collectively, the breadth of institutional representation, the international diversity of contributors, and the rigorous editorial process underscore the journal’s standing as a high-reputation scholarly outlet with growing global visibility and impact.
